I like a little cardamom in my sponge, a soft vanilla mocha cream filling and a cardamom spoked ganache, but you have options! Maybe you love the festive flavours of orange zest and cinnamon, or the smoky sweetness of chestnut? I also love stem ginger with chocolate and it works beautifully folded through the filling with a little muscovado sugar. Or maybe you love nothing more than a black forest gateau? A can of black cherries and a dash of Amaretto, Kirsch or Cherry Heering with a snow white whipped cream centre is all you need to make those dreams come true!
