FAQ

  • Can I make this without eggs?

    I haven't tried the recipe without eggs. I should be possible, but I can't guarantee the outcome.

  • Can I make this without xanthan or guar gum?

    Yes you can, but the texture will be firmer and a little gummier. The small amount of xanthan gum helps to bind up liquid and keep the bread tender without adding much extra chew. Add an extra 5g of psyllium husk powder to the recipe.

List of ingredients

You can make substitutions for some of the ingredients, although the recipe won't be exactly the same. This is the list of ingredients for a chocolate babka, but you can choose from poppyseed, cinnamon sugar and cardamom sugar fillings too.

  • Whole milk or plant based milk, (ideally soy or oat), double cream or coconut milk, eggs, unsalted butter or plant butter, cashew nuts or cashew butter or oat flour or glutinous (sweet) rice flour, Greek yogurt or coconut yogurt

  • Tapioca starch or arrowroot starch, cornstarch, potato starch or cornstarch, sorghum flour or buckwheat, millet, white teff or oat.

  • blonde psyllium husk, xanthan gum or guar gum, baking powder, fast acting or dried yeast, salt.

  • Dark chocolate, golden syrup or corn syrup or maple syrup or rice syrup.
